So let's say a team brings in a sub pitcher for the day, the teams' #1 pitcher is there playing that day. Team makes it to the Championship, who should start the game? Coaches opinion? Parents of the #1 teams' pitcher opinion?

Depends on the circumstances...did the team's #1 pitcher just pitch the semi-final game and throw a lot of pitches...or did the sub? But if there was a long break or for some reason the Championship game is on a new day...the team
s #1 pitcher should get the start barring no injury or arm soreness.

^^^^THIS^^^^^ If you need another pitcher to get you there and win, then maybe your #1 isn't a true number one and the coach knows it. Doesn't make it right though.

Like others posted, depends on how the weekends games played out and the time in between last game played and championship game.

Honestly; no one should get upset regardless of who pitches when you make it that far especially if it is a competitive event.

If it a non competitive event that the team donated to get to the championship game (like happens in the lower ages at this time of year) then there is nothing wrong with splitting some time in the final game with the committed player starting the contest.
