All things being equal, college coaches generally pick a multi-sport kid over one who's focused only on softball, excluding pitchers. First of all, it's almost a certainty that if a kid can make a HS socker, basketball AND softball team, they are an athletic kid. A single sport kid has more to prove.
Also, college coaches want organized kids who can keep their grades up. A 3-sport kid in HS has to work harder year round, because their "sports season" never ends. It's not for every kid, but the ones who can do it are showing that they can handle a tough schedule.
As long as the grades are kept up, multiple HS sports are a good challenge for the student-athlete.
